Food is fundamental to human existence and is different across different cultures – it also shapes and is shaped by physical and social environments. In this course, we will explore the many ways food is produced, processed, distributed, and consumed. We will use a wide range of foods as case examples to explore human-environment interactions, locally and globally. Learning Outcomes By the end of this course, students will be better able to: 1. Describe the origins of the current global food system and assess the social, ecological, economic and health issues within it 2. Describe opportunities for change within our global food system and identify our role in this change 3. Differentiate between claims and evidence in readings and lectures, and examine the assumptions and worldviews underlying different arguments (including their own) 4. Identify and assemble appropriate and reputable sources of evidence to support their own arguments or perspectives on the course material Class Organization Access to Course Materials and Readings The reading list is comprised of articles, book chapters, and other media from a variety of sources. All readings must be completed via the Perusall app before each lecture (more details below). Link to the reading will be posted in each week’s page on Quercus. Lectures will be held online via Zoom (link is posted on Quercus for each class). On Zoom, you will be able to ask questions and answer questions the instructor asks, using the chat and other functions. All activity on Zoom will be recorded and will not be anonymous (unless otherwise indicated). All lecture recordings and slides will be made available on our Quercus page as soon as they are available in case you are unable to attend a lecture or if you wish to review. Tutorials Tutorials are places where a small number of students get together to discuss the lectures, readings, etc. and do activities in a smaller group.
